from Mary Fouts: Squash Casserole [Wondering what to do with all the squash that you'll harvest from your garden this summer? Here's a great recipe! 6 cups large diced yellow squash and zucchini Vegetable oil 1 large onion, chopped 4 tablespoons butter 1/2 cup sour cream 1 teaspoon House seasoning, recipe follows 1 cup grated cheddar cheese 1 cup crushed butter crackers (recommended: Ritz) Preheat oven to 350 F. Saute the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. Line a colander with a clean tea towel. Place the cooked squash in the lined colander. Squeeze excess moisture from the squash. Set aside. In a medium size skillet, saute the onion in butter for 5 minutes. Remove from pan and mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes. House Seasoning 1 cup salt 1/4 cup black pepper 1/4 cup garlic powder Mix ingredients together and store in an airtight container for up to 6 months. Yield: 1 1/2 cups -------------------------------------------------------------------------------- from Robin Martin: Summer Stir Fry This is something I can whip up on the gas burner on the side of the bbq so it doesn't heat up the house. 4 red potatoes, cubed 2 bell peppers, cut into chunks (I like red and yellow to add color) 1 small onion, cut into chunks a handful of mushrooms, sliced a cup of thick sliced zucchini fresh garlic chopped (optional, I use ALOT) couple of dashes of lemon pepper, depending on your taste I use olive oil, about 2 tablespoons. So it has a thin layer of oil on the bottom of your skillet. Nonstick is best but I often will use the iron one. Heat the oil, and put in the red potatoes and onion. Cook till potatoes are semi done. That's when the potato is sort soft but still firm. They will start browning too by now. Add in the rest of the vegetables and the lemon pepper seasoning and continue to cook till they look almost cooked through but still have a little crunch.
